Summer Corn and Tomato Salad (Yields two large entrée-style servings or four side dish servings)
• 3 ears cooked corn
• 1 small red onion, chopped
• 2 big handfuls (roughly 1 cup) grape tomatoes, sliced
• 1 small bunch chopped basil
• 1 small ripe avocado, cubed
• A drizzle of olive oil, & a splash of apple cider vinegar for dressing
• Salt and pepper to taste
Simply combine ingredients and serve. If you’re bringing this salad to a gathering, a cluster of basil leaves makes a pretty garnish. Feel free to add your own touches to the salad, such as using large tomatoes instead of small ones, or corn that tends to be sweet.
